How I Made My Curry

Since I am on a diet - South Beach, and the first two weeks are pretty limited, I made my own curry creation. Lucky for me I had an Indian friend who had mixed me up the traditional spices...not sure what they are but I'm sure you can find out - normally I use the Patak's curry spices in a jar all mixed with oil. Anyway, here is what I did: First I sauteed the onion, mushrooms and beef chunks (bitesized) & added a little garlic in a little olive oil. Then added two tomatoes that I had frozen since I can't have sugar right now and my canned ones had sugar in them. Then I added a little of the leftover Pataks curry (in a jar) seasoning that was up high inside the jar so wasn't in the oil, just to fill out the flavor and some chopped up cauliflower & some broccoli. Then I added a little water, lots of pepper, a little salt - enough water to simmer it all for about 30 mins. to cook the meat. Lastly, I tossed a handful of spinach leaves on the top and put a lid on it. I checked it a few times and gave it a stir and when it was done I ate 1/2 the pan!! If I could have, I would have used canned tomatoes and their juice so the sauce would have been richer and more of the Pataks curry stuff and had it over some brown rice.

ps... I used a nice tender sirloin steak and cut it up - you don't want it to be a tough one or it will be like rubber when it's cooked.
